Moreover, great Burgundy can inspire like a great orator, satisfy like the most subtle of three-star meals, and leave you at peace at the end like the slow movement of a Mozart piano concerto. first kiss of someone you are just about to fall in love with. Who could fail to be entranced? Here is a wine which can sing like a nightingale, shine forth like a sapphire, intrigue like the most complex of chess problems and seduce like the I have loved red Burgundy for decades, ever since the first really great Pinot Noir passed my lips. This has given me space to add chapters on Chablis and the Côte Chalonnaise. Not wishing to repeat myself, I have therefore put these aside. Much of what was in the domaine profiles would not need to have been greatly changed. They have been completely revised and rewritten: all the tasting notes date from post–2000. I have retained the first and the last segments. Côte d’Or consisted of three parts: a discussion of the land, the history of each commune, the vineyards and the properties formed the first section an in-depth profile of 60 top estates with notes of a vertical tasting then followed and an assessment of the last 40 vintages was the final element. So great have been the changes since then and so large the number of new domaines worth considering that an update is long overdue.
